Grease Trap / Interceptor — Boston (BWSC)
Boston restaurants must install and maintain a properly sized grease trap or interceptor under Boston Water and Sewer Commission rules.
What it is. A properly installed grease trap or interceptor required in all restaurants/food establishments, so that FOG discharge does not exceed 100 mg/L, under BWSC sewer-use regulations (Article III, Sec. 15).
Who issues/enforces it. Boston Water and Sewer Commission (BWSC) (City/special-district layer).
When you need it. Any food establishment discharging significant FOG; device sized/installed during build-out.
How to comply. Install the correctly sized device per BWSC rules; only bacteria-based additives are permitted (no chemical grease additives).
