What it is. A properly sized grease interceptor to keep fats, oils, and grease out of the municipal sewer, required of all food service establishments by Charlotte Water (Charlotte-Mecklenburg Utilities, CMU) under its grease-trap policy.

Who issues/enforces it. Charlotte Water (Charlotte-Mecklenburg Utilities) — FOG program (City layer).

When you need it. Any restaurant; the device is sized/installed during build-out.

How to comply. Install a compliant, correctly sized interceptor per the Charlotte Water grease-trap policy; coordinate with building/plumbing permits.
