Fort Worth restaurants need a grease trap/interceptor discharge permit and a compliant device sized per the City's guidance document.
What it is. A grease trap/interceptor discharge permit (restaurant wastewater discharge permit) and a properly sized, compliant device to keep fats, oils, and grease out of the sewer. Traps/interceptors must be designed and installed per the City of Fort Worth Guidance Document for Sizing and Installation of Grease Traps and Interceptors. Grease traps should be located outdoors where possible; indoor traps must be flush with (and sealed to) the floor, easily accessible for cleaning, and compliant with the City plumbing code.

When you need it. Any restaurant discharging FOG; sized/installed during build-out, with the discharge permit before operating.
