Grease Interceptor — San Antonio (SAWS FOG Ordinance)
San Antonio restaurants must install a grease interceptor under the SAWS Fats, Oils & Grease ordinance, with waste evacuated only to a permitted disposal facility.
What it is. A properly sized grease interceptor to keep fats, oils, and grease out of the sewer, required under the San Antonio Water System (SAWS) FOG ordinance (Ordinance 2011-05-12-0378). Interceptor waste must be completely evacuated by a waste hauler and disposed of only at a facility authorized and permitted to receive it.
Who issues/enforces it. San Antonio Water System (SAWS) — FOG / Pretreatment program (City layer). The device is coordinated with the DSD plumbing permit during build-out.
When you need it. Any restaurant discharging FOG; the interceptor is sized/installed during build-out.
How to comply. Install a compliant, correctly sized interceptor per the SAWS FOG ordinance.
